Thick Winter Soup with Vegetables, Sweet Potato & Cream Coconut

Tonight I’m mailing you a thick soup recipe that’s perfect for winter evenings. We made this recipe before Christmas with our new companion: our Magimix multi-function robot . What a pleasure 🙂 A perfect recipe for those who like thick and creamy soups. No excuse not to eat vegetables with this quick and easy winter soup recipe. For this soup, I opted for carrots, turnips, leeks, sweet potatoes, chanterelles and coconut cream. The association was delicious. I also added chips of nuts on top. A treat 🙂 Here we go for the recipe of this winter soup. A soup recipe thick and creamy ideal for winter evenings … poireau 1 leek grosses carottes 2 big carrots navet jaune 1 yellow turnip patate douce 1 sweet potato cas de crème de coco cuisine (ici Isola Bio) 4 cases of cooking coconut cream (here Isola Bio) poignées de girolles 2 handfuls of chanterelles pepper 5 berries salt noix 5-6 nuts Start by cleaning and peeling all the vegetables and sweet potato and cut into coarse pieces. In a large saucepan, boil them all together for about 20 minutes. Check the cooking with a knife. Meanwhile, sauté the mushrooms in the pan after removing the rubbery end. When the vegetables are cooked, drain them. In a blender or robot, pour the vegetables and add the mushrooms. Start mixing. Add gradually the coconut cream. Blend until the mixture becomes creamy. If necessary, finish with the blender dipping. Pour into a plate, warm if necessary, then crush the nuts and sprinkle on the top of the soup.
